Easy Peezy Seed Loaf

Whether you’re trying to cut carbs completely or just cut back a wee bit, this Easy Peezy Seed Loaf is exactly that ridiculously easy to make and pretty darn tasty too. Super versatile, you can enjoy it with a range of toppings like cheese, avocado or garlic butter INGREDIENTS  ¾ cup sunflower seeds ¾ cup pumpkin seeds ¼ cup linseed/flaxseed (whole) 2 tbsp chia seeds ¼ cup Ceres Organics Ground LSA + P (linseed, sunflower seed, almond + pumpkin seeds) ¼ cup psyllium husk 2 tbsp infused olive oil, I recommend The Village Press range ¼ cup water 4 eggs salt/pepper A pinch of Turmeric 1 tsp rosemary, fresh if you have it but dried is fine. Instructions Place all ingredients in a bowl, except the rosemary, and mix well. Once thoroughly combined place the mixture into a lined loaf tine and leave to sit for approximately 30 minutes before placing in the oven. It’s easier to put the mixture in a loaf tin when it’s still relatively runny. Leaving the mixture to sit before placing it in the oven will ensure excess moisture is absorbed. Ridiculously easy Meatballs with Sweet and Sour sauce

These meatballs are sooooo simple to make and are practically fail safe, great for flatmates who can’t cook or nights you just want something simple. The quantities really needn’t be exact… I tend to muck around with the sauce, tasting as I go. Ingredients:  100g premium beef mince (or more if you want more… but if you increase the mince quantity, remember you’ll need more of everything) 1/4  diced onion 1/4 cup breadcrumbs or rolled oats 1 tablespoon flour 1/3 cup tomato sauce 1 desert spoon vinegar 1 tablespoon brown sugar Garlic salt Cracked pepper Mix together mince, onion and breadcrumbs, I find it’s easier to use wet hands rather than a wooden spoon or food processor. In a separate bowl mix into a smooth paste flour, 2 tablespoons water, salt and pepper. Now is the fun part…. where you can jazz up this recipe by adding ingredients to the mince mixture. Pork Satay Balls, with crushed Chilli Peanuts

These sticky little morsels are delicious when dipped in the fragrant crushed nuts and chilli, and can be easily made with chicken rather than pork if you wish. We served these up as a BBQ entrée and our guests LOVED them. I took some liberties with the ingredient measurements based purely on how they came at the supermarket… and it didn’t affect the taste. (Makes about 30) Meatball Ingredients 400g – 500g Pork mince 500g Sausage meat 1-2 tsp garlic, crushed 1-2 tsp ginger, minced 1 tsp Chinese five-spice powder 2-3 tbsp peanut butter (add more if you want to really nutty) ¼ – ½ cup satay sauce 2-3 tbsp oil Crust Ingredients ½ cup peanuts, finely chopped 1 tbsp mint or coriander, finely chopped ( I tend to use both as I find mint can be overpowering) 1 red chilli, finally chopped ¼ small red onion, very finely diced In a large bowl combine mince, sausage meat, garlic, ginger, spice powder and peanut butter. Spinach and Strawberry salad with Poppy Seed dressing

Salads should only ever be simple…I personally feel that a complicated salad flies in the face of what it means to be a salad. This salad is ridiculously easy to make AND it tastes a little bit fancy. Ingredients: Salad 6 cups fresh baby spinach. 2 cups strawberries, hulled and sliced. 1 Avocado (not too ripe) diced. Gorgonzola or blue cheese… I never have rules regarding cheese, go with what feels right to you 🙂 1/4 sliced almonds. Toasted or raw depending on your tastes (and time). 1/2 a small red onion * For a slight variation you can add shredded coconut & chunks of orange too.  Dressing 1/2 cup Avocado oil (or olive oil if that’s what you’ve got on hand) 3 tablespoons cider vinegar 2 tablespoons honey (I use Manuka honey) 1 tablespoon poppy seeds Pinch of mustard powder Salt & Pepper Note – you don’t need to be too stringent regarding measurements, I generally wing it. The Assembly Don’t prep this too far in advance, the spinach can end up looking a little sad after sitting too long outside of your vegetable crisper in the fridge.
